First Course


Butternut squash soup, Castelrosso cheese, chestnuts

24-Month inported Parma ham, "Giardiniera"

Whole wheat tagliolini, tomato sauce, imported burrata cheese, basil oil


Cacio e Pepe

Fettuccini with Roman sheep's milk cheese, black pepper and Parmesan



Hand-rolled spaghetti, Hickory Farm (PA) rabbit ragu, white whine sauce, fresh thyme
Second Course


Ravioli filled with duck leg confit and Mascarpone cheese, with a reduction of Foie Gras, Meyer lemon and Madeira wine

Milanese style: saffron, bone marrow and stracchino cheese

Branzino dell' Atlantico

Roasted Atlantic rockfish with sauteed spinach, white baby beets and sunchoke-ginger puree
